A few years ago I decided that as a proper Texan (sort of) I should know how to cook some delicious BBQ. I had always loved eating it, but never had I ventured past anything other than grilling. Porque? I decided to find out. Around the same time, a new show coms on TV called BBQ Pittmasters. I began watching. Step 1. Soon after I visited some friends in Wisconsin. Yes, Wisconsin of all places.
"What the heck is the difference?", most people say. To me, grilling is fast, direct, high heat, while BBQ is slow, indirect, low heat. "No way, hot and fast is the way to go", some would scream from the mountain tops. Regardless, I like Neo, wanted to see how deep the rabbit hole went.
